Microwave Fudge Recipe

This fudge is super simple to make, right in the microwave and just 3 necessary ingredients. White chocolate morsels, sweetened condensed milk and mini marshmallows are all you need to make this extremely soft, melt-in-your-mouth fudge. I personally prefer the extra soft style of fudge. But, if you like the firm (almost like a chocolate bar) type of fudge you’ll want to try a different recipe.

This soft white fudge needs to be kept in the refrigerator until you eat it. The fudge doesn’t melt into puddles at room temp but it does get very soft.

  • Sweetened Condensed Milk
  • Mini Marshmallows
  • Salt
  • Vanilla Extract
  • Candy of Choice (optional)

How To Make Microwave Fudge

  1. Prepare loaf pan by lining with wax paper or parchment paper. Sprinkle candies on the bottom (if adding candy).
  2. Mix white chocolate morsels and sweetened condensed milk in microwave safe bowl. Microwave 60 seconds.
  3. Add marshmallows, stir and microwave 30 more seconds.
  4. Add salt and vanilla. Stir until melted and smooth. Immediately pour mixture into loaf pan. Top with more candy (optional).
  5. Refrigerate 4-6 hours. Remove fudge and paper, transfer to cutting board. Peel paper from fudge, cut into squares.
  6. Store fudge in refrigerator.

Fall has definitely arrived. Not only is it pretty nippy in the mornings but everything around us it getting pumpkin spiced! I’m not big into pumpkin spiced lattes or most pumpkin desserts really (with the exception of these Mini Pumpkin Cream Pies). But I love adding a sprinkle of pumpkin pie spice to treats like this Easy Pumpkin Spiced Caramel Apples Recipe and these Pumpkin Spiced Crispy Treats. The spice blend adds a perfect hint of flavor to non-pumpkin desserts. It is especially delicious with caramel.

These Pumpkin Spiced Caramel Apples are super-duper easy to make because I cheated with store bought caramels. Is that cheating? I don’t know, homemade caramel can be so temperamental. And just check out the video . . . these are so, so simple!

There are 3 very important things to remember when making this recipe. Very Important!

  1. Use soft caramels. Otherwise you will end up with super hard caramel apples that pull out fillings! I use Werther’s Soft Caramels.
  2. Have everything prepared before melting the caramel. You gotta work fast on this one!
  3. Don’t forget to grease the wax paper. I repeat . . . Do Not Forget To Grease The Wax Paper. I totally forgot when making my video and it was a huge pain in the rear to get the apples off the paper. Huge!

Ingredients

  • 2 Lbs Small Apples (5-6 apples), (I use Sweetango Apples)
  • 4 (4.5oz) Bags Soft Caramels, (I use Werther's)
  • 1/2 teaspoon Pumpkin Pie Spice
  • Wooden Apple Spikes

Instructions

  1. Thoroughly wash apples and dry completely before beginning. Insert spikes into tops of apples.
  2. Line a baking sheet with wax paper and grease heavily.
  3. Place unwrapped caramels in large microwaveable measuring cup (or a vessel that's base is not too wide). Microwave caramels in 15 second increments, stirring between each. Will take total 1-2 minutes depending on microwave. 
  4. Once caramels are melty and smooth, add pumpkin pie spice. Stir and immediately begin to dip apples.
  5. Dip each apple in caramel, use spoon or knife to remove excess caramel from bottoms. Transfer to prepared wax paper.
  6. Complete the dipping as quickly as possible then transfer apples to refrigerator to set. If necessary, caramel can be reheated an additional 15 seconds to melt.

Notes

If concerned about too much pumpkin spice flavor, decrease amount to 1/4 teaspoon. This will ensure a very mild flavor.

If you want to make a sweet for your sweetheart, look no further. This Rice Crispy Treat Candy Cake is sweet, layered with sweet, layered with more sweet, then topped with sweets! Sometimes an over-the-top show-stopping dessert is in order. I made this for my daughter’s birthday and she was quite impressed. It also just so happens to be perfect for a Valentine’s Day dessert!

Rice Crispy Treat Candy Cake

This Rice Crispy Treat Candy Cake is a fun and whimsical dessert recipe. Perfect for Valentine's Day, kids birthdays or for anyone that doesn't like traditional cake.

Ingredients

Rice Crispy Treats

  • 3 Tablespoons Unsalted Butter
  • 24 ounces Standard Marshmallows
  • 1½ teaspoons Vanilla Extract
  • 9 Cups Crisp Rice Cereal

Frosting

  • 1½ Cups Unsalted Butter
  • 6 Cups Powdered Sugar
  • Small Pinch Salt
  • 1 teaspoon Vanilla Extract
  • 1-2 teaspoons Heavy Cream

Fillings/Toppings

  • 1/2 Cup Strawberry Jam - divided
  • Strawberry Licorice Laces

Instructions

Rice Crispy Treats

  1. Line 3 (8") round cake pans with foil. Generously grease with butter or shortening. Set aside.
  2. (preparing the crispy treats is easier when done in 2 batches)
  3. In large microwave safe bowl, microwave butter until melted. Add marshmallow and stir to coat.
  4. Microwave 1-2 minutes or until marshmallows puff up into a giant blob. (Watch the marshmallows the entire time, do not walk away!)
  5. Stir melted marshmallows, add vanilla and stir.
  6. Immediately stir in crisp rice cereal until fully combined.
  7. Transfer to prepared pans, dividing evenly between the three.
  8. Firmly press crispy treats into pan. Use the bottom of a cup or ramekin that has been sprayed with nonstick. Press until the treats are packed tightly into pans. Using your fingers, tuck the edges down firmly to create level layers.
  9. Let cool.

Frosting

  1. Using stand mixer fitted with whisk attachment, whip butter for 1-2 minutes or until creamy.
  2. Gradually add powdered sugar a half cup at a time mixing between additions.
  3. Add salt and vanilla.
  4. Whip on medium/high for 5 minutes or until frosting becomes light and fluffy (sometimes this may take a few extra minutes).
  5. Add heavy cream 1 tsp at a time until desired consistency is achieved. Frosting should be creamy and spreadable but not too soft. Refrigerate 5-10 minutes before frosting layers.

Assembly

  1. Carefully remove crispy treat layers from pans and peel off all foil.
  2. Place the first layer on serving dish. Spread a third of the frosting on top of layer. Top with 1/4 cup strawberry jam and spread evenly.
  3. Place the second crispy treat layer on top and repeat frosting/jam step.
  4. Place third layer on and spread remaining frosting on top.
  5. Top with Strawberry Licorice Ropes.
  6. Store in a cool place until serving.

Notes

*This cake requires your sharpest knife for cutting slices.

So I’m not hating all these no-bake recipes. My cookies may be sugary puddles due to the high elevation but my no-bake treats are on point! So far I’ve made delectable Vanilla Cookie Truffles and the highly addictive Peppermint Pattie Chocolate Truffles.

I’m not even a big raw cookie dough fan and I am obsessed with these Edible Cookie Dough Truffles. Like, get them outta my house before I eat every last one, kind of obsessed!

I’ve always been leery of edible cookie dough recipes because while they leave off raw eggs they all tend to still include uncooked flour . . . which you are not supposed to consume. Then I came upon this recipe for Gourmet Toasted Cookie Dough by Sprinkle Bakes. The flour is heated in the oven or microwave before being turned into edible cookie dough. I did some checking around (i.e. Googling) and sure enough heating the flour does eliminate the risk of E.coli. . . yeah, you read that right. . . E.coli! While the risk is low, you are not supposed to consume raw flour or boxed cake mix due to the possibility of contamination. I don’t mess around with food contamination y’all!

The flour can be heated on a baking sheet for 10 minutes at 300°F or heated it in the microwave for 1 to 2 minutes, stirring occasionally until an instant read thermometer reads 160F. I use the microwave method.

Oh, and I’m back to making videos. I’m a little rusty but I’m pretty happy with the first video I’ve made in quite a long time.

Ingredients

Dough Balls

  • 3/4 Cup All Purpose Flour
  • 1/4 teaspoon Sea Salt
  • 1/4 Cup Dark Brown Sugar
  • 1/4 Cup White Sugar
  • 1/4 Cup Unsalted Butter - melted
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Almond Extract, use 1/8 tsp for a more mild almond flavor
  • 1/3 Cup Mini Chocolate Chips
  • 1-2 Tablespoons Whole Milk

Chocolate Shell

  • 1½ Cups Semi Sweet Chocolate Chips
  • 1 Tablespoon Vegetable Shortening

Instructions

Dough Balls

  1. Prepare flour by heating on a baking sheet for 10 minutes at 300°F or heating in the microwave for 1 to 2 minutes, stirring occasionally until an instant read thermometer reads 160F. I use the microwave method. Let cool.
  2. Combine flour, salt and sugars. Stir in melted butter, vanilla and almond extract. Stir until combined and formed into a crumbly consistency.
  3. Add mini chocolate chips and stir.
  4. Stir in milk 1/2 Tb at a time until mixture forms into a dough.
  5. Roll into walnut size balls (approximately 12) and transfer to baking sheet lined with wax paper. Refrigerate while preparing the chocolate shell.

Chocolate Shell

  1. Microwave chocolate chips and shortening for 1½ minutes, stop to stir every 30 seconds. Stir vigorously until melted and smooth.
  2. Dip cookie dough balls into chocolate and return to wax paper. Refrigerate 10 minutes to set chocolate.

Notes

Store in refrigerator. Eat within 3 days.

The specialty Winter flavors are by far my favorite! I love chocolate and peppermint, anything eggnog and of course holiday cookies. These Peppermint Pattie Chocolate Truffles are little bites of heaven! This is the first of many no-bake recipes that I will be sharing this year. Most of us love the convenience of a no-bake treat but for me it will be necessary. I recently moved to high altitude and have yet to bake any successful cookies. I’ll get there eventually.

I’m actually glad to have the motivation to make no-bake treats because I am finding so many amazing recipe ideas that I have never made before, like these Peppermint Pattie Chocolate Truffles. Never would I have thought to make a homemade version of one of my favorite candy bars. But holy smokes, these are not only super easy to make, they taste unbelievable! I had first made these into a pattie shape. But it was my daughter that requested I make them into bite sized truffle balls. She’s just full of good ideas!

No-Bake Peppermint Pattie Chocolate Truffles

Yield: 15

It's time for holiday treat platters and homemade gifts. These No-Bake Peppermint Pattie Chocolate Truffles will be the star of any Christmas dessert tray!

Ingredients

  • 2 Tablespoons Unsalted Butter - softened
  • 2 Tablespoons Light Corn Syrup
  • 2 Cups Powdered Sugar
  • 2-3 Drops Peppermint Oil, No More!
  • 2-3 teaspoons Water
  • 1 Cup Semi Sweet Morsels
  • 2 teaspoons Shortening
  • White Sprinkles

Instructions

  1. Mix butter, corn syrup, powdered sugar and peppermint oil with a fork. Add water 1 teaspoon at a time and blend until mixture becomes a thick paste. Refrigerate 10 minutes to firm up mixture.
  2. Roll into 15-18 walnut sized balls. Transfer to a baking sheet lined with wax paper. Refrigerate 2+ hours.
  3. In microwave safe bowl, combine semi sweet morsels and shortening. Microwave for 30 seconds then stir. Microwave 30 more seconds then stir vigorously to melt remaining chocolate.
  4. Work quickly to dip peppermint balls into melted chocolate. Transfer to wax paper and top with sprinkles.
  5. Refrigerate 10+ minutes to cool chocolate.
  6. Store in refrigerator until serving.

Easy Kid Party Food

I made these fun Candy Sushi treats for my daughter’s school birthday dessert. My daughter is quite a character . . . she loves sushi and doesn’t like cake! So this was the perfect birthday treat for her.

But, all the kids in her class went CRAZY over these little dessert sushi! So much so that the teacher requested more for a special school activity.

Basically, these are perfect for anyone who loves sushi. Or if you are looking for an easy unique treat, these are it.

It’s as simple as making Rice Krispies Treats and forming them to look like Nigiri Sushi rice. Then top with a Swedish Fish candy and a strip of Fruit By The Foot.

My secret to the ultimate soft, gooey crispy treats are Jet-Puffed Jumbo Mallows. GO JUMBO!!!

Ingredients Needed Candy Rice Crispy Sushi (screenshot for grocery list)

  • Jumbo Marshmallows
  • Butter
  • Crispy Rice Cereal
  • Swedish Fish Candies
  • Fruit by the Foot

How To Make Candy Sushi

  1. Prepare large jellyroll pan by lining with wax paper and generously buttering or spraying with nonstick.
  2. In extra large bowl; combine marshmallows and butter. Microwave 2-2 ½ minutes or until marshmallows have puffed up and almost doubled in size.
  3. Immediately stir in crispy rice cereal.
  4. Transfer mixture to prepared pan and using hands or the bottom of a cup, press evenly into pan.
  5. Refrigerate until cooled. Once crispy treats are firm, carefully remove wax paper and transfer treats to cutting board.
  6. Cut treats into small rectangles (approx 3-4″ in length). Form into nigiri sushi shape with hands. This should yield 30+ crispy treats.
  7. Top each crispy treat with a Swedish fish candy. Trim Fruit by the Foot into strips long enough to wrap around each piece of candy sushi. Wrap around crispy treats and fish candies.

Sweet Snickers Cheese Ball

Yield: 10

This Sweet Snickers Cheese Ball Recipe is perfect for your game day party! This dessert dip will be a crowd favorite!

Ingredients

  • 16 ounces Cream Cheese - softened
  • 1 Cup Marshmallow Fluff
  • 1/2 Cup Powdered Sugar
  • 1/2 Cup Creamy Peanut Butter, or crunchy
  • 15 Fun Size SNICKERS - chopped

Instructions

  1. Mix cream cheese, marshmallow fluff, sugar and peanut butter until smooth. Lay 2 long strips of plastic wrap in a criss cross pattern. Transfer cream cheese mixture to center of plastic wrap. Bring up all sides of plastic wrap, cover, tighten and gently form into a ball shape. Refrigerate 4+ hours or until firm.
  2. Unwrap cheese ball, press chopped SNICKERS onto the bottom and place onto a platter. Gently press remaining SNICKERS onto cheese ball until completely covered. Refrigerate until served.
  3. Serve with crackers, pretzels and sliced apples.

This White Chocolate Gingerbread Fudge is a fun holiday dessert. This quick and easy microwave fudge will be a new favorite holiday treat!

I love bringing two favorite treats into one amazing recipe. This time around it is fudge and gingerbread! And, this is the super-duper easy microwave fudge!

Perfect for a last minute holiday treat, this Gingerbread Fudge comes together fast. I prefer fudge with a stiff consistency, especially when it will be sitting out on a platter. If you like softer fudge, decrease the amount of white chocolate by about 1/4 cup or so and you’ll be good.

This White Chocolate Gingerbread Fudge is a fun holiday dessert. This quick and easy microwave fudge will be a new favorite holiday treat!

Gingerbread Fudge

Yield: 10

Ingredients

  • 2 Bags White Chocolate Chips, 11oz, about 3½ cups
  • 14 oz Sweetened Condensed Milk, NOT evaporated milk
  • 1 teaspoon Gingerbread Spice

Topping

  • 2 Tablespoons Powdered Sugar mixed with 1/4 teaspoon Gingerbread Spice
  • Gingerbread Boy Sprinkles - optional

Instructions

  1. In microwave safe bowl; combine white chocolate and sweetened condensed milk.
  2. Microwave 30 seconds. Stir. Microwave 30 more seconds, immediately add gingerbread spice and stir vigorously until smooth.
  3. Transfer to an 8x8 dish that has been lined with foil and generously greased with butter.
  4. Spread mixture evenly into dish.
  5. Refrigerate 6+ hours.
  6. Remove fudge from dish and carefully peel foil from fudge. Cut into cubes.
  7. If adding gingerbread boy sprinkles; melt 2-3 Tb white chocolate to attach sprinkles to fudge.
  8. Dust fudge with sugar mixture.

Wine Chocolate Truffle Recipe

ingredients:

3 Cups Dark Chocolate Chips – divided
1/3 Cup Heavy Cream
2 Tablespoons Butter
2 Tablespoons Russian River Valley Pinot Noir
2 Tablespoons Shortening
Maldon Sea Salt

instructions:

In microwave safe bowl; heat 2 cups chocolate chips, cream and butter in microwave for 30 seconds. Stir then microwave 30 more seconds. Stir vigorously until completely smooth. Stir in wine and mix until completely incorporated. Refrigerate for 4 hours or more.

Remove from refrigerator and set at room temp 30 minutes. Scoop chocolate with a small cookie scoop. Use hands to roll into 18-20 truffle balls. Transfer to platter lined with wax paper. Refrigerate for 1 hour or until firm.

In microwave safe bowl; combine remaining dark chocolate chips and shortening. Microwave 30 seconds. Stir. Microwave 30 seconds then stir vigorously until smooth.

Dip each truffle ball into chocolate coating until evenly coated. Transfer to wax paper line platter and immediately sprinkle with salt. Refrigerate until chocolate coating sets.

Along with cheese and fruit, meat is necessary. My snack arrangement included salami, prosciutto and coppa.
